Chocolate Cherry Cake (Emily's Mom)

1 box devils food cake mix
2 eggs
1 tsp vanilla or almond extract
1 can cherry pie filling
1/2 cup canola or vegetable oil

Stir all together well. Pour into 9x13 pan. Bake at 350 degrees just until cake springs back when touched. Do not over bake! Poke holes in cake with a wooden spoon. Pour frosting over it allowing the frosting to run into holes.

Frosting

1 cup sugar
1/3 cup milk
1/3 cup butter

Bring to a boil in small saucepan and continue boiling for 1 minute. Stir in 2 cup of chocolate chips and stir until smooth. Pour over cake.

Pumpkin Scotchies (Kelda)

This is a big recipe, so you may want to 1/2 it., it yields 48 cookies.



1c butter softened

1c splenda (or regular sugar...more calories, same taste)

1c brown sugar

2 large eggs

1 T vanilla

1c pumkin puree.

 combine all ingredients until fluffy.



3c flour

2T baking soda

1T salt



1T cinnamon

1/2 T nutmeg

1/2 T ground cloves

(or 2 T pumkin pie spice is cheaper if you don't have all the others)

wisk all dry ingredients in a large bowl.



Fold in wet ingredients.



Add either 2 c butterscotch chips or

1c butterscotch

1c milk chocolate NOT semi sweet!



Dough will be very sticky.  You can add a little more flour to make it easier to work with, but not much.

Drop by spoonful otot greased cookie sheet.

Bake at 350 for approx 10-12 minutes. Allow cookies to cool for 2 minutes before removing from sheet.

Macaroni and Cheese (Emily)

White Sauce

1 1/2 Tbsp Butter
1 1/2 Tbsp Corn Starch
1 Can Carnation Evaporated Milk
1 tsp salt

Melt butter in medium saucepan, add corn starch, cook over low heat stirring constantly for 1 minute. Do not burn. Whisk in milk and salt. Bring to boil, lower heat, and cook for 5 minutes, stirring until sauce has thickened. The sauce should lightly coat the back of a spoon.

Macaroni & Cheese

3 cups White Sauce
1/2 lb pasta - cooked (I used corn pasta)
4 cups cheese
corn flake crumbs

Mix white sauce and cheese until cheese melts. Add pasta and mix. Place in pan. Cover with corn flake crumbs and extra cheese. Bake at 375 F for 25-30 minutes (or until brown and bubbling.)

Cheesy Potatoes (Emily)

Bag Frozen Hash Browns
Sour Cream
Cheese
Corn Flake Crumbs
Butter

Mix has browns sour cream and cheese together. Top with cheese, corn flake crumbs, and pats of butter. Bake at 350 F for about an hour (or until browned as desired.)

Cream Chicken and Rice (Emily)

Chicken

Sour Cream
Cream of Chicken
Chicken
Dried Beef

Mix sour cream and cream of chicken together. Wrap chicken in strips of dried beef. Cover with sour cream mixture. Bake at 350 for about an hour (until chicken is tender.)

Rice

Minute Rice
Beef Broth
Water

Cook one cup of liquid to one cup of rice.

Caprese Salad (Emily)

Tomatoes
Fresh Basil
Fresh Mozzarella (buffalo, if available)
Balsamic Vinegar

Mix everything together. Can be served with toasted baguette.

Candied Carrots (Emily)

Boil carrots until desired softness. Drain. Add butter and brown sugar and let cook over low heat for 5 to 10 minutes.
